Les travaux pr\u00e9sent\u00e9s durant cette soutenance portent sur un tel simulateur r\u00e9alis\u00e9 \u00e0 l\u2019aide de condensats de Bose-Einstein manipul\u00e9s par un r\u00e9seau optique unidimensionnel. Lors d\u2019une mesure, nous rel\u00e2chons les atomes du r\u00e9seau optique. Certains entrent alors en collisions, leur vitesses quantifi\u00e9es entra\u00eenant l\u2019apparition de halos de collisions de diam\u00e8tre discret. Cela nous a amen\u00e9 \u00e0 proposer un protocole, bas\u00e9 sur un d\u00e9calage abrupt de la phase du r\u00e9seau optique, en vue de contr\u00f4ler ces halos. Cette premi\u00e8re \u00e9tude soul\u00e8ve alors une nouvelle question : au-del\u00e0 des halos de collision, peut-on, par un variation arbitraire ad\u00e9quate de la phase du r\u00e9seau optique, fa\u00e7onner la distribution en impulsion du condensat ? Cette question est un probl\u00e8me d\u2019optimisation auquel le formalisme du contr\u00f4le optimal peut r\u00e9pondre. Je montrerai que, gr\u00e2ce \u00e0 cette th\u00e9orie, l\u2019\u00e9tat quantique du condensat dans le r\u00e9seau optique devient compl\u00e8tement contr\u00f4lable.
